I finally took time to tend to my gardening today and found a lot of ripe asparagus. I wish I’d been paying attention because some of the florets had opened.
Usually what I do is turn around, go back in the house, and get some water boiling in my steamer.
Steamed fresh-picked asparagus with butte and sea salt – mmm-mm!
This time I decided to make a casserole. I gots a simple, foolproof recipe and that’s the treat I have to share. This recipe won a Betty Crocker cooking contest. I’ve known several people who did not care for asparagus enjoy this a lot. It’s terrific when you make it, but the leftovers are even better.
You’ll need:
1 can of stems and pieces asparagus (don’t get the whole spears)
1 can of cream of mushroom soup
About three quarters of a stack of saltine crackers
6 or 7 slices of American cheese
Butter
Milk
Salt and black pepper
* Preheat the oven to 350 degrees.
* Take a 2 quart bowl and thickly coat the inside with butter. What I do is roll back the paper on a stick of butter and use it like a crayon. Then I’ll cut a few thin slices of butter and use my fingers to add some more.
* Wipe off your hands and then crush the crackers into small pieces about half as big as a penny. I crush them in the package the stack comes in.
* Pour about half the cracker crumbs into the bowl and tilt it around till the cracker crumbs and dust coat the inside of the bowl.
* Put the asparagus and cream of mushroom soup in a separate bowl. Then fill the cream of mushroom soup can with milk and add it. Give it a little salt (remember, there’s salt in the crackers) and several hard shakes of black pepper. Stir it all up together good.
* Pour the mix into the cracker-lined bowl.
* Cover the mix with sliced American cheese.
* Cover the American cheese with a thin layer of the rest of the cracker crumbs.
* Put, oh, about a half dozen slices of butter here and there on top of the cracker crumbs.
* Put that rascal in the oven for about 35 or 40 minutes. It will be done when it’s bubbling and the cracker crumbs on top are browned.
* After it’s all eaten, make sure to drop me a thank-you note.
Yes, I love Asparagus…Fresh from the ground….I may be weird, but I like raw asparagus…Pick and Eat it…not yer nose but the ‘sparagus….
I like to wrap the spears in aluminum foil with butter and garlic salt, and cook it on the grill with the rest of the food…I have been enjoying apple wood burgers, and asparagus…between snow storms..I have about five large wild asparagus patches around my property….and they are just starting to poke through…Spring time in the Rockies…
I will try your suggestion…
